| Vinification | After de-stemming, soft pressing of the grapes, followed by a short criomaceration of 4-8 hours and a decantation at 0°C. The alcoholic fermentation is carried out in temperature-controlled stainless steel tanks. The wine is kept on the fine lees for three months. |
