Training method

Espailer – spurred cordon at 2,20 x 0,80 m equal to 5,300 vines per hectare, yielding 2 kg each,
corresponding to approximately 11,000 kg of grapes per hectare.

Harvest

Harvest takes place at full maturity in September and is performed mechanically.

Vinification

Alcoholic fermentation takes place in stainless steel vats in a temperature-controlled environment, favouring a prolonged contact of skins with the must. Malolactic fermentation occurs in the month of November right after the alcoholic fermentation. Ageing takes places first in stainless – steel tanks, then for at least three months in cement vats and finally for at least another three months in the bottle.
